I Made Pancakes From Scratch

It’s true. I had a yen for pancakes yesterday and went all the way out of the house to the store to get bacon to go with. Came home to find we were out of pancake mix. Ben said he’d made them from scratch last time. I said How did you do that? Do you have a recipe? He said No, I just randomly tossed some stuff in a bowl and hoped for the best.

So I followed a recipe. Flour plus water plus eggs plus butter plus baking powder plus sugar. Not hard. Came out good.

My cooking from scratch list now includes:

meat loaf
mashed potatoes
pasta sauce
barbecue sauce
pancakes

Pretty much. I forgot about chicken a la Ben's mom. I don't count anything that's like - one ingredient. Or two. Like fish with butter on it or something.

Easy pancakes:

1 cup flour
1 cup milk (or beer, they're really good with beer)
1 egg
1 tbsp oil - don't use olive oil, too strongly flavoured
1 tsp baking powder
some sugar, or brown sugar, or honey. Depends how you like them. I use about a tablespoon of brown sugar or honey.
You can also add a pinch of cinamon if you're feeling exotic.

I find this one easy to remember because it's 1 of everything.
